A refreshing cold vegetable soup.
Ingredients for 6 servings
- 300g fresh tomatos
- 1-2 cans peeled tomatos
- ½ – 1 cucumber
- 1 large pepper
- 2 cloves of garlic
- ½ fresh chillipepper
- 1 large onion
- Salt and pepper
- Olive oil
- Fresh coriander
- Chop the tomatos and the cocumber into large pieces. Clean and chop the peppers into large pieces. Skin the garlic. Chop the garlic and chillipepper fine.
- Peel and cut the onion into thick slices.
Heat 1-2tbs olive oil and fry the onions until clear (glassy). Add half of the fresh tomatos and sweat. Remove from heat.
- Slowly add the rest of the fresh tomatos, the canned tomatos, ghurkin, pepper, garlic and chillpepper.
Puree, add salt and pepper to taste and refine with a little olive oil.
- Chill for at least two hours before serving.
Garnish the soup with finely freshly chopped corainder.
