This fresh rice salad is a wonderful dish for the summer.

Ingredients for 6 servings

  • 250 g risotto or long grain rice
  • 2-4 gherkins
  • Small jar black olives
  • 200 g cocktail tomatos
  • 200 g Swiss cheese
  • Capers
  • Salt and pepper
  • Olive oil
  • Lemon juice
  • Fresh parsley


  1. Cook the rice "al dente"
  2. Cut the remaining ingredients into small cubes (1cm) and mix into the warm rice. All ingredients in equal portions except for the capers which should be a half portion.
  3. Season with salt, pepper, a bit of olive oil and lemon juice.
  4. Garnish this colorfull and appetizing salad with fresh parsley.
