This fresh rice salad is a wonderful dish for the summer.
Ingredients for 6 servings
- 250 g risotto or long grain rice
- 2-4 gherkins
- Small jar black olives
- 200 g cocktail tomatos
- 200 g Swiss cheese
- Capers
- Salt and pepper
- Olive oil
- Lemon juice
- Fresh parsley
Preparation
- Cook the rice "al dente"
- Cut the remaining ingredients into small cubes (1cm) and mix into the warm rice. All ingredients in equal portions except for the capers which should be a half portion.
- Season with salt, pepper, a bit of olive oil and lemon juice.
- Garnish this colorfull and appetizing salad with fresh parsley.
